What arrived was a small cup with a spiral of milk on top, warm and sweet and nothing like the coffee I grew up with. I thought I had made a mistake. A small room with dark wood and low light, a master who had made the same blend the same way for thirty years, and a single cup that took long enough to arrive that you had to settle in and wait for it. The coffee was dark and bitter and served black. It was loud and it was fast, and everybody seemed to be ordering a drink with a name I had never heard of. For a while I kept the two experiences in separate boxes, one labelled proper coffee and the other labelled whatever this is.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That did not last. What changed my mind was the pour-over gear on the back bench of my local, all of it Japanese, sitting there as though it had always belonged. Then I found out that some of the roasters I liked in Tokyo had trained here in Australia. The two cultures I had been keeping apart had been talking to each other for years.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That is what this site is about. I am not going to tell you which country makes better coffee, because the more interesting question is what each place decided coffee was for. Australia decided it was a daily ritual you build a neighbourhood around. Japan decided it was a craft you slow down for.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\">The Coffee Culture pages cover how each tradition came about.
